S found this recipe for "spaghetti cupcakes" (video). All 3 girls like them so this is the second Sunday we've made them to have on hand for the week ahead. Easy lunch, snack, or breakfast!
Here's the recipe for reference:
1/2 lb (or 1/2 a package) spaghetti (we use gluten-free rice spaghetti)
3 eggs
1/2 cup parmesan cheese
toppings - pasta or pizza sauce, mozzarella, and anything else you like
Preheat oven to 350F. Cook spaghetti and drain. (If using gluten-free pasta, rinse cooked spaghetti with cold water to reduce stickiness.) Whisk eggs and parmesan cheese together. Pour over spaghetti and stir to combine. Grease muffin tins or use cupcake liners (silicone liners work well). Fill cups with spaghetti mixture and top with chosen toppings. Bake for about 15-20 minutes. Makes 10. (We double the recipe.)
