6 cups turkey bone broth (or chick broth)
2 cups water
1.75 cups cooked turkey, chopped
1 cup uncooked rice
1 onion, chopped
2 stalks celery, sliced
1 large carrot, coursely chopped or sliced
4 cloves garlic, minced
1/4 cup parsley, chopped
2 tsp. salt (1 tsp. if using store-bought broth)
pepper to taste
In a soup pot over medium-high heat, saute celery, carrot, onion, and garlic in 1 Tbsp. olive oil until onion is softened. Add remaining ingredients and simmer until rice is cooked.
Optional: serve with chile sauce.
Note: All 5 of us love this soup.
